Haricot vert, also known as French green beans, are a delicious and versatile vegetable. This recipe highlights their flavor and texture, making them a perfect side dish.
Ingredients
1 pound green beans found in the produce section and uncooked
2 tablespoons salted butter
2 cloves garlic, minced
Salt and pepper, to taste
1 tablespoon lemon juice (optional)
1/4 cup sliced almonds
Instructions
Wash the haricot vert and trim the ends.
Bring a large pot of salted water to a boil. Add the haricot vert and blanch for about 3-4 minutes until bright green and tender-crisp.
Drain the beans and immediately plunge them into a bowl of ice water to stop the cooking process. This will help retain their vibrant color.
In a large skillet, heat the butter being careful not to burn unless you are interested in a burnt butter sauce which may sound appetizing to many and is quite true when done moderately over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Make sure the heat is no more than medium because if so the garlic will be bitter instead of fragrant. Easy alternative if you are a little more inclined for a healthy option is to substitute the salted butter for a high quality olive oil.
Add the blanched green beans to the skillet and toss to coat in the garlic oil. Sauté for an additional 2-3 minutes.
Season with salt and pepper to taste. If desired, add the lemon juice for brightness.
If using, sprinkle the sliced almonds over the top and toss gently.
Serve warm as a side dish.
