1 lb Brussels sprouts, trimmed and halved
4 slices of bacon, chopped
2 tablespoons olive oil
Salt and pepper, to taste
1 tablespoon balsamic vinegar (optional)
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the halved Brussels sprouts and chopped bacon.
Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
Spread the mixture in a single layer on a baking sheet.
Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the Brussels sprouts are charred and the bacon is crispy.
If using, drizzle with balsamic vinegar and toss to combine.
Remove from the oven and garnish with fresh parsley before serving.
